The Ultimate Curry in a Hurry: Japanese Curry

Ingredients:

  • 1 pound chicken breast, cut into bite-size pieces

  • Salt and pepper, to taste

  • 2 tablespoons vegetable oil

  • 2 carrots, sliced

  • 1 large white onion, diced

  • 8 ounces mushrooms, sliced

  • 2 medium yellow potatoes, peeled and diced

  • 4 cups water or chicken stock (or a mix of both)

  • 1 whole box of Japanese curry cubes (Glico brand or any other trusted brand) - 220g/7.76 oz



Instructions:

Begin by marinating the chicken breast pieces with salt and pepper. In a large skillet or frying pan, heat the vegetable oil over medium-high heat.

Once hot, add the chicken and cook until browned on all sides. Remove the chicken from the pan and transfer it to a plate.

In the same skillet, add the sliced carrots, diced onion, sliced mushrooms, and diced potatoes. Sauté the vegetables for 3 to 5 minutes.

Return the cooked chicken to the skillet with the sautéed vegetables. Stir to combine and cook for an additional 2 minutes.

Pour in the 4 cups of water or chicken stock (or a mix of both) into the skillet, ensuring that all ingredients are submerged. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 10 minutes.

While simmering, add the Japanese curry cubes to the skillet. Stir well until the cubes are completely dissolved into the liquid.

Allow the curry to simmer for an additional 5-10 minutes, or until it reaches your desired consistency and the vegetables are tender.

Once the curry has thickened and the vegetables are cooked through, remove the skillet from the heat. Serve the Japanese curry hot over steamed rice or noodles.
